Michelle's Mom's Cold Shrimp Salad

Description
We tried this dish for the first time as a side for a seafood-themed dinner night, and it was spectacular— yummy sweet with a just hint of heat to it. The above-named Michelle is a running friend, who likely doesn't know her mom's recipe is now famous.
Ingredients
- 1 med onion; thinly sliced into circular rings
- 1/2 cup cider vinegar
- 1/4 cup ketchup
- 2 tbsp white sugar
- 1 tbsp chopped parsley (fresh)
- 1 garlic clove; minced
- 1 tsp salt
- 1 tsp mustard seed
- 1/2 tsp celery seed
- 1/4 tsp cayenne
- 1/8 tsp black pepper
- 1/2 cup vegetable oil
- 3 med oranges; peeled
- 2 shrimp rings
- lettuce
Procedure
Combine thawed shrimp and onion in a large bowl. combine remaining ingredients in a small bowl, adding oil last. Pour mixture over the shrimp and marinate for 12+ hours. Drain to serve. Add oranges, and arrange on lettuce leaves for presentation.

I might try upping the cayenne content a bit next time, to give it a very tiny little bite.
